A heated issue: product treatment
Delicate products like juice drinks are thermally treated before filling – whether in glass or in PET bottles. This has a beneficial effect on the taste of the product which is one crucial factor for its sales success. But a much more important feature of hot filling is product safety and quality, because yeasts and moulds are the most frequent cause of spoilage. Pasteurisation at temperatures exceeding 100 °C can kill pathogenic germs and deactivate enzymes. Temperatures for sterilisation are less than 100 °C. All microorganisms – except for the heat-resistant spores – are killed off.
