Calypso: new hot-wort treatment procedure

A modern whirlpool with a downstream stripping system – in a single vessel – shortly describes the latest innovation of the Krones Process Technology Team. The Bischofshof brewery is a tradition-steeped Regensburg brewing facility and the first to install Calypso.
Calypso is the consequential implementation of fluidic aspects and principles of heat transfer:

• The wort flows tangentially through the newly developed inlet at an optimum flow velocity.
• The wort is showered over the inner walls of the Calypso vessel, down which it flows in a thin layer with a large surface.

This means that Calypso does not need to be so intensively boiled in the preceding wort-boiling step. Unwanted aroma components are reduced after hot-wort separation due to the particular structure of the Calypso whirlship – because they are going to be hot-stripped after the rest in the whirlpool with a technically incomplex solution that works without vacuum and is easy to clean.
Since last April, Steinecker´s Calypso "Whirl-Ship", which marries the advantages of a classical coolship to those of enclosed hot-wort treatment, provides optimally clarified wort at Bishofshof.
