Wort production: fast and with maximum yield
The brewers of Boulevard Brewing place various demands on the mash lautering process:
- Uniform washout of the spent grains
- Bright wort within a minimized timeframe
- Low fresh water demand
The object of all these demands is obvious: high extract quality and high brewing sequence performance.
The basic design of the Pegasus lauter tun from Steinecker, with its ring-shaped structure, the particular geometry of the raking knives, the increased number of run-off sources ensures optimal washout of the spent grain. The American brewers have dimensioned their lauter tun for a brew size of 180 hl, with 12 brews in 24 hours.
The data of the acceptance report testify to the high performance capability of the system as well: With a rhythm of 12 brews, an average of 113 minutes total busy time with a specific false bottom load of 199.5 kg/m² has been achieved. The Boulevard brewers operate with a false bottom load of 230 kg/m².
